Bronco’s Burritos brings authentic Mexican flavors to Justice

At Bronco’s Burritos, the essence of Mexican cuisine is on full display. From savory tacos and hearty burritos to traditional dishes like menudo and pozole, every item on the menu reflects the rich flavors and heritage of Mexico. Whether it’s a quick bite or a leisurely meal, Bronco’s Burritos offers diners a culinary journey that celebrates the vibrant traditions of authentic Mexican cooking.

The restaurant, located at 8029 W. 79th St. in Justice in a former Dunkin Donuts, opened in September and has seen a steady flow of customers, according to Bronco’s Burritos manager, Brandon Rodriguez.

“It’s a great location with great customers,” said Rodriguez, of Bolingbrook.

Rodriguez has worked in the restaurant industry for more than eight years and brings his professionalism and drive for excellence to Bronco’s Burritos, which is owned by his stepfather, Eugenio Cordova.

Cordova, also of Bolingbrook, is not only the owner but a self-proclaimed chef with more than 20 years of cooking experience in the Chicago area.

At Bronco’s Burritos, he specializes in serving a variety of traditional dishes, including mouthwatering tacos, flavorful burritos, hearty chilaquiles, delicious tortas, and comforting soups. His menu also features iconic Mexican delicacies like menudo, prepared with care and rich in flavor.

“For me personally, it’s all about the customer,” Cordova said. “I love cooking, and I put my everything into every dish I create, but what I love most is seeing the expression on the faces of people as they take the first bite of their food – when they try it and really enjoy it, that is the biggest form of gratitude.”

Cordova said it’s hard to pick a favorite dish, but Rodriguez was quick to point out his own go-to.

“The steak burrito is my ultimate favorite,” Rodriguez said. “We use prime cut skirt steak. It’s delicious, but I have to say that all our burritos are really popular.”

For non-meat eaters, the veggie burrito is a standout, featuring delicately cut vegetables cooked to perfection. The burrito is placed on a flat griddle, drizzled with oil over medium heat until at least two sides are slightly golden, and completed with freshly sliced avocado and a side of sour cream.
